DESCRIPTION

• Nok Cha is a Sejak, or First Flush/Harvest, green tea from the Jirishan mountain range on the southern Korean coast. Sejak is a type of Korean green tea that is made from the first flush of new leaves. It is considered to be one of the highest quality Korean green teas, and is known for its delicate flavor and aroma.

• To produce Sejak tea, the tea leaves are harvested in the spring, usually in late April or early May. The leaves are then steamed and rolled by hand to prevent oxidation. Unlike other green teas, Sejak is shaded for several days before harvesting, which enhances its flavor and aroma.

• This light infusion conceals a brilliant complexity of flavor on the boundary between Chinese and Japanese teas. The leaves are gently steamed and then pan-fried to complete the drying process offering a rich, savory, oceanic flavor.

• Add 1 Tbsp of tea to 12-oz of 70 degrees Celsius water, and steep for 1 minute. Three infusions.
