Matcha Usucha is a high ceremonial tea grade of matcha that comes from tea trees that are 30 years old and younger.
Matcha Koicha is the highest ceremonial tea grade of matcha that comes from tea trees that are over 30 years old. It has a special preparation where a very small amount of water is added to a high amount of matcha to produce a "thick" matcha.
