      • Add 1 Tbsp of rooibos and 1 Tbsp of spices to 12-oz of boiling water. Steep for 3 minutes. One infusion. Serve with milk and honey.
      • For a stronger taste, try this alternative brewing method that we use at the tearoom:
        • Prepare the entire masala spice separately. Pour the entire bag of masala spice into a saucepan. Add about 2 and 1/4 cups of filtered water to the pan. Bring to a boil. Simmer for 20-30 minutes with the lid slightly tilted off the pot to prevent boiling over. When done, strain the spices from the liquid infusion. Add filtered water to make sure you have a total of 2 cups of liquid. Set aside.
        • In a 12 oz mug or pot, add 1-2 Tbsps of rooibos in a strainer, add boiling water, infuse for 4 minutes. Remove rooibos tea. Add 1/4 cup (or more if desired) of masala liquid.
        • Add milk and honey to taste.
        • Put the remaining unused masala in the refrigerator to be heated up for future use.
